Strawberry Shortcakes

Ingredients
- 4 tbsp. unsalted butter, softened
- ½ cup granulated sugar
- 1 tsp. vanilla extract
- 2 large eggs
- ¾ cup self-rising flour
- 2 tbsp. evaporated milk plus more for topping
- Whipped cream
- 1 pint strawberries, washed
Directions
- Preheat oven to 350F/180C.
- In Whip N Mix Chef, place butter and sugar, then replace cover and turn handle on gear I until well combined.
- Add vanilla extract, eggs and mix until well incorporated and pale in color.
- Switch to gear II then mix in self-rising flour until smooth then add in milk.
- Distribute batter between Silicone Ring Form filling them up halfway and bake for 10-12 minutes or until golden brown on top. Let cool 5 minutes before unmolding. Repeat process with remaining batter.
- Hull strawberries; slice half and cut in small dice the remaining.
- When ready to serve add 1-2 tablespoons of evaporated milk to center, then add diced strawberries to center, a dollop of whipped cream and sliced strawberries on top.
