Strawberry Shortcakes

  • 4 tbsp. unsalted butter, softened
  • ½ cup granulated sugar
  • 1 tsp. vanilla extract
  • 2 large eggs
  • ¾ cup self-rising flour
  • 2 tbsp. evaporated milk plus more for topping
  • Whipped cream
  • 1 pint strawberries, washed


  1. Preheat oven to 350F/180C.
  2. In Whip N Mix Chef, place butter and sugar, then replace cover and turn handle on gear I until well combined.
  3. Add vanilla extract, eggs and mix until well incorporated and pale in color.
  4. Switch to gear II then mix in self-rising flour until smooth then add in milk.
  5. Distribute batter between Silicone Ring Form filling them up halfway and bake for 10-12 minutes or until golden brown on top. Let cool 5 minutes before unmolding. Repeat process with remaining batter.
  6. Hull strawberries; slice half and cut in small dice the remaining.
  7. When ready to serve add 1-2 tablespoons of evaporated milk to center, then add diced strawberries to center, a dollop of whipped cream and sliced strawberries on top.
