Roasted Garlic Soup

  • 2 heads of garlic, unpeeled
  • 1 tbsp. olive oil
  • pinch of salt and pepper
  • 1/4 cup water
  • 4 tbsp. unsalted butter
  • 1 yellow onion, diced
  • 1 tsp. dry thyme
  • 4 tbsp. sherry vinegar
  • 1 1/2 cup water
  • 1 cup chicken stock


  1. Break apart two heads of garlic and transfer to base of MicroPro Grill. Add olive oil, pinch of salt, pepper and mix to combine. Add 1/4 cup of water on the corner so it fills up the channel and cover in casserole position.
  2. Microwave on full power for 10 minutes. At the end of roasting, carefully peel all the garlic, mix with water and set aside.
  3. In Chef Series II 3.2-Qt./3 L Sauteuse melt butter on medium heat and add onion and thyme. Cook until softened, about 5 minutes.
  4. Add roasted garlic, remaining ingredients and stir well. Cover and simmer for 20 minutes. Let cool slightly and puree in SuperSonic Chopper Extra fitted with blade attachment. Season to taste and serve with a drizzle of cream, parsley and toasted bread.
