Pistachio Mint Chocolate Chip Cookies

Ingredients
- ½ cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1/3 cup brown sugar, packed
- Pinch of salt
- 1 large egg
- ½ tsp. vanilla or mint extract
- ½ tsp. baking soda
- cup all-purpose flour
- 3.4 oz. pistachio flavored instant pudding mix
- 4.6 oz. crème de menthe chocolates, chopped
- ½ cup semisweet chocolate chips
Directions
- Preheat oven to 375F/190C.
- In Thatsa Jr. Bowl, mix butter and sugars using Silicone Spatula.
- Add in salt, egg, extract and mix to combine.
- Add baking soda, flour, pudding mix and mix until well incorporated.
- Fold in chocolate and refrigerate for 10 mins.
- Portion using medium sized Portioning Scoop and bake for 10 mins. Repeat process until all cookie dough is used. Let cool 5 mins and serve.
