Pistachio Mint Chocolate Chip Cookies

Ingredients

  • ½ cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar, packed
  • Pinch of salt
  • 1 large egg
  • ½ tsp. vanilla or mint extract
  • ½ tsp. baking soda
  • cup all-purpose flour
  • 3.4 oz. pistachio flavored instant pudding mix
  • 4.6 oz. crème de menthe chocolates, chopped
  • ½ cup semisweet chocolate chips

Directions

  1. Preheat oven to 375F/190C.
  2. In Thatsa Jr. Bowl, mix butter and sugars using Silicone Spatula.
  3. Add in salt, egg, extract and mix to combine.
  4. Add baking soda, flour, pudding mix and mix until well incorporated.
  5. Fold in chocolate and refrigerate for 10 mins.
  6. Portion using medium sized Portioning Scoop and bake for 10 mins. Repeat process until all cookie dough is used. Let cool 5 mins and serve.
