Horchata de Coco

Ingredients

  • 6 cups hot water
  • 4 cups white rice
  • 13.5 oz./328 g coconut milk
  • 15 oz./425 g cream of coconut
  • 7 cups cold water
  • 2 tsp. vanilla extract
  • 1 tsp. ground cinnamon

Directions

Prep rice

  1. Add hot water and rice to medium bowl and set aside until water has cooled. In Supersonic Chopper Tall with blade attachment, blend together water and rice, 2 cups at a time, and strain onto 1-Gal./3.8 L Classic Sheer Pitcher until all rice and water have been blended together.

Combine & enjoy

  1. Add remaining ingredients and mix until well combined.
  2. Serve over ice.
