“Clean Out-the-Fridge” Veggie Strata
Ingredients
- 3 cups stale bread, cubed or torn
- Veggies (aim for 1½–2 cups total)
- Any mix of:
- Spinach/kale
- Peppers
- Mushrooms
- Onions
- Tomatoes
- Zucchini
- Broccoli
- Leftover cooked vegetables
- ½ cup cheese scraps, any mix you have
Custard
- 4 large eggs
- 1¼ cups milk (or milk/cream blend)
- ¾ tsp salt
- ¼–½ tsp pepper
- Optional: garlic powder, dried herbs, or seasoning odds & ends
Instructions
- Preheat your oven to 350°F (180°C).
- Lightly grease your Tupperware Voila™ Glass Square Baking Dish.
- Sauté raw veggies until soft (skip if already cooked).
- Inside the baking dish, layer bread first, veggies next and cheese over the top.
- In a medium bowl, whisk eggs, milk and spices together to make the custard.
- Pour custard evenly over the dish. Press lightly to help absorption. Let sit for 10 minutes.
- Bake uncovered for 35-45 minutes. Center should be set and top lightly golden.
- Rest for 10 minutes before serving.
