Caprese Pasta Salad

Ingredients:

  • 8 oz dry short pasta (cavatappi, farfalle, rotini…) pasta, cooked and drained (±225 g)
  • 1½ cups cherry or grape tomatoes, halved (±225 g)
  • 8 oz pearl mozzarella, halved (±225 g)
  • ½ cup fresh basil, thinly sliced (±10 g)

Balsamic Dressing

  • ¼ cup olive oil (±60 ml)
  • ¼ cup white balsamic vinegar (±60 ml)
  • 2 garlic cloves, minced

Salt and pepper to taste

Directions:

  1. In a small bowl, combine dressing ingredients.
  2. In a large bowl, add all ingredients for pasta salad and toss in dressing.
  3. Enjoy as is, or with added protein of choice if desired.
