Tropical BBQ Pork

Ingredients
- 2 lb. pork tenderloin
- 1 cup pineapple chunks, fresh or frozen
- 1 cup diced mango, fresh or frozen
- 18 oz. barbeque sauce
- 1 ¼ cup pineapple juice
- 1 tsp. salt
- ½ tsp. black pepper
Directions
- Cut pork into large chunks about 3-4” pieces and place in base of Microwave Pressure Cooker.
- Add remaining ingredients and mix to combine. Cover and lock in place.
- Microwave on high power for 30 minutes.
- At the end of cooking time let pressure release naturally. Shred and serve as desired.
