Gluten-free Pancakes

Ingredients

  • 1/3 cup almond milk
  • 2 large eggs
  • 2 tbsp. pure maple syrup
  • 1 tsp. vanilla extract
  • 1 ½ cups almond flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 2-3 tbsp. unsalted butter

Directions

  1. In Thatsa Jr Bowl, add milk, eggs, maple syrup and vanilla extract. Whisk until well combined.
  2. Add almond flour, baking powder, salt and whisk until smooth.
  3. Melt butter over medium low heat and use medium sized Portioning Scoops to add batter to frypan. Cook for 3-5 minutes then flip and cook an additional 2 minutes. Repeat with remaining batter and serve warm with garnish of choice.
