Gluten-free Pancakes

Ingredients
- 1/3 cup almond milk
- 2 large eggs
- 2 tbsp. pure maple syrup
- 1 tsp. vanilla extract
- 1 ½ cups almond flour
- 1 tsp. baking powder
- ¼ tsp. salt
- 2-3 tbsp. unsalted butter
Directions
- In Thatsa Jr Bowl, add milk, eggs, maple syrup and vanilla extract. Whisk until well combined.
- Add almond flour, baking powder, salt and whisk until smooth.
- Melt butter over medium low heat and use medium sized Portioning Scoops to add batter to frypan. Cook for 3-5 minutes then flip and cook an additional 2 minutes. Repeat with remaining batter and serve warm with garnish of choice.
