Apple Pie Cookies

Ingredients
Apple pie filling:
- 1 cup diced apples, granny smith or gala
- ½ tbsp. granulated sugar
- ½ tbsp. brown sugar
- ½ tsp lemon
- ¼ tsp. apple pie spice
- ½ tbsp. unsalted butter
Cookies:
- ½ cup unsalted butter, softened
- ¼ cup granulated sugar
- ½-cup brown sugar
- 1 large egg
- ½ tsp vanilla extract
- ¼ tsp. salt
- ½ tsp. baking soda
- ½ tsp. apple pie spice
- 1 tsp. cornstarch
- 1 ½ cup all-purpose flour
Directions
- In 2-cup Micro Pitcher, add all apple pie filling ingredients and mix well. Microwave for 90 seconds then stir. Let cool.
- In Thatsa Bowl, mix butter and sugars until creamy. Add egg, extract and mix.
- Add salt, baking soda, cornstarch, apple pie spice and flour. Mix just until incorporated.
- Preheat oven to 350F/180C. Place cookie dough in the fridge while oven warms up.
- Portion out cookies and bake for 10 minutes.
- After removing cookies from oven make a well in the center of each and add ½ tablespoon of apple pie filling. Then repeat process with remaining ingredients. Serve immediately.
