Esquites Tostadas

Ingredients

  • 2 – 14.75 oz. whole kernel fire roasted corn
  • Juice of 1 lime
  • ½ cup cotija cheese
  • 1/3 cup cilantro, finely chopped
  • 2 tsp. chili lime seasoning
  • 8 tostadas
  • 8 tbsp. mayo
  • Toppings such as red onion, sour cream, etc.

Directions

  1. In Thatsa Jr. Bowl place corn, lime juice, cotija cheese, cilantro and chili lime seasoning. Mix until well combined.
  2. Serve by adding 1 tbsp. of mayo to each tostada, followed by corn mixture and if desired any topping of choice. Serve immediately.
